Recycled Dinner Tonight....or, Making Prudy Proud!

The husband called yesterday morning to let me know he had a late afternoon meeting and wouldn't be home for dinner. "Off the hook", thought I! I've been to the grocery store every day for the past five days, and really didn't want to go again - mainly because I looked like a total skank from running outside, and it's always on those days that I run into 15 people I know! So I went to my freezer to see what I could rustle up for myself and the kiddos.

A few weeks back I made spaghetti and meatballs (awesome recipe, from Barefoot Contessa Family Style, pp. 103-104). I had frozen about a dozen leftover meatballs and some sauce, which I turned in to Meatball Subs last evening. This was a major hit with my kids. MAJOR! Such a hit in fact, that next time I make these meatballs I'll do extras specifically so that we can have these subs again! They never even knew they were eating leftovers. If you don't have the cookbook, here's a link to the original recipe: http://www.foodnetwork.com/food/recipes/recipe/0,,FOOD_9936_34023,00.html

By the way, the reference in my title line is to one of my favorite blogs, Prudence Pennywise. Stop by if you've never visited, it is darling! She has great recipes, a fun soundtrack, and nifty money saving tips for frugal homemakers. ;-) Here's a link to her blog:

Holy Scom Boh Lee! Is that really your kitchen? I am an hour away in Sheboygan and I can be there in forty five minutes if you are the one cooking!

I saw your blog over at The Mom Blog network.

Hi Leah,
I have been on your blog and I really like the recipes and pictures! I am also on Prudy's and that's how I found yours. You can't go wrong with meatball sandwiches. Yum!

I love meatball subs! I always make a mess when I'm eating them, but I don't let that stop me.

I haven't made meatball subs in a while....I really like them.

I would pay to see you birth a dog *evil laugh*

Leah;
Thanks so much for mentioning my humble blog! I absolutely love yours and those meatball subs would be a hit over here. I've got all the right stuff in the freezer too. You're giving me a good idea.
I am proud of your pennywise dinner! I'm jealous of your kitchen too, for the record.

Ahh, running into people you know at the grocery store. It's bound to happen. I like to pretend that I don't see them.

Lol! That always happens to me at the grocery store!

Those subs look great! Mr. SGCC would be a happy camper if I served those. Thanks!

I LOVE sandwiches. One of the greatest food finds around the WORLD.

(PS. Bought some Costco ciabatta! It's awesome. Half is frozen to go to the beach with us this weekend!)

I made this recipe the other night and my boyfriend loved it. I didn't even think about freezing the left over meatballs and there were so many, and since there are only two of us I gave the leftovers to the dogs. Thanks for the idea of meatball sandwiches. I saw your blog on Prudy's, both of you have great ideas and recipes!
