A few weeks back I made spaghetti and meatballs (awesome recipe, from Barefoot Contessa Family Style, pp. 103-104). I had frozen about a dozen leftover meatballs and some sauce, which I turned in to Meatball Subs last evening. This was a major hit with my kids. MAJOR! Such a hit in fact, that next time I make these meatballs I'll do extras specifically so that we can have these subs again! They never even knew they were eating leftovers. I love meatball subs! I always make a mess when I'm eating them, but I don't let that stop me.

I made this recipe the other night and my boyfriend loved it. I didn't even think about freezing the left over meatballs and there were so many, and since there are only two of us I gave the leftovers to the dogs. Thanks for the idea of meatball sandwiches.
